Acorn squash, a crock pot and leftovers. This is an easy way to clean out the frig and create a healthy lunch or dinner.
This takes less than 5 minutes to make and about 3 hours to cook, as a mater of fact, I put it together while wait for the water to boil for my morning coffee.
Just used a small 1.5 quart crock pot. Cut off just enough of the acorn squash to fit in the pot, spoon out the seeds and stuff it with left overs. In this case I used some frozen veggies, freeze dried tomatoes, mushrooms and a little butter.
