Plantains a healthy sweet desert

Plantains with yogurt and fruit

Fried plantains with yogurt and dried berries.

Plantains are simple to cook and can have a diverse taste (see the video).  In the image above I cooked these in coconut oil for a sweet flavor and clarified butter for a nutty flavor, just enough to cover the bottom of the pan.  The yogurt adds a nice texture and the berries add their own flavor. A little maple syrup goes a long way and can add another level sweetness and flavor.

This is a simple way to have a sweet desert with no sugar added.
